Veggie Patties from leftover kofta mix

My last post was on Nargisi or Malai Kofta curry. While making the vegetable mix for koftas, I made them on large quantity(off course, without knowing). But, when I realized that, there will be a lot leftover vege mix, I started to think how to use those up. Then it clicked me. I made veggie patties for sandwich next morning on Breakfast with that. It tasted really yumm and I was happy that I used them in a healthy way..

Method :

  • Take veggie mix a big spoonful and over your palm, give it a round shape of approx. 2-3 inches in diameter. 
  • Make other patties same way as above.
  • Heat a tawa or griddle, add 1 tblsp. oil, and place the patties one or two at a time. In medium heat, fry them until brown. Then reverse and place the upside down. Add little oil if needed. Fry until both sides are evenly brown.
  • Fry other patties same way.
  • To make sandwich or Burger, toast two slices of bread, place some lettuce leaves on one slice, place one veggie pattie, then place some cucumber and tomato slices over it and finally add some ketchup. Place the other slice of bread.
  • Serve immediately................
  • Enjoy your sandwich/burger with yummy veggie patty.......
