Sweet Potato Casserole

This has become my favorite Thanksgiving side dish, and they are so good left over to boot!


Sweet Potato Casserole
3 large sweet potatoes/yams, pealed and cut
1 c sugar
1 tsp salt
1 tsp vanilla
4 eggs
1 c evaporated milk
1/2 c butter

Boil sweet potatoes, let cool and mash
Tip:  Instead of boiling, steam them in Ziploc steam bags! It is so much quicker and one less dirty pot.
Mix potatoes together with sugar, salt, vanilla, eggs, milk, & butter.
Pour into 9x13 baking dish.

Topping:
1 c brown sugar
1 1/2 c flour
1 c pecans
1/3 c coconut
1/2 c melted butter

Mix together until crumbly. Place on top of sweet potatoes and bake at 350 for 30-40 minutes, or instead of topping bake sweet potato mixture 30 minutes and then top with miniature marshmallows and put back in the oven under broiler until marshmallows are lightly browned.
