If you are looking for something a bit healthier to snack on while you watch those big bowl games, this is one of my family's favorites. It's very healthy, low fat, high in fiber and vitamins. We love it as a dip with tortilla chip "scoops," while some members of the family enjoy it as a side dish. It's easy, colorful, and well balanced - the sweet corn of summer, the tang from the balsamic vinegar and lime juice, the fiesta bite of fresh cilantro... MmmMmm!
Ingredients:
- 1 can black beans, drained and rinsed well
- 1 can sweet corn niblets
- 2 roma tomatoes, diced
- 2/3 green bell pepper, diced or a mix of green and red/yellow bell peppers
- 1/3 red/purple onion, diced
- 2 jalapeƱos, diced - seeded for mild, with seats for spicy
- 1 handful fresh cilantro, cut into small pieces
- 2 large juiced limes
- to taste balsamic vinegar
- to taste extra virgin olive oil
- to taste salt
- to taste fresh cracked pepper
Cut up and mix everything. Allow to marinate for a while. That's all there is to it! BIG bag of tortilla chips!
* I think this would be amazing with grilled corn, I just haven't gotten around to doing that yet.
* addendum - I recently made this with the addition of a small diced cucumber for extra crunch. It was great!
