Pecan Pie Squares
Crust:
3 cups flour
1/4 cup plus 2 tablespoons sugar
3/4 cup butter, softened
3/4 teaspoon salt
Grease 15 1/2 x 10 1/2 x 1 inch jelly roll pan. Beat on medium speed until crumbly. Press firmly in pan and bake for 20 minutes at 350 degrees.
Filling:
4 eggs, slightly beaten
1 1/2 cups sugar
1 1/2 cups Karo light or dark syrup (I used light)
1 1/2 teaspoon vanilla
2 1/2 cups pecans, chopped
3 tablespoons butter, melted
Mix all ingredients, except nuts, until well blended. Add nuts and pour over baked layer. Bake until set, about 25 to 30 minutes. Cool and cut into squares.
