I've simplified this restaurant copycat recipe by using a prepared pizza shell, rotisserie chicken and bottled Thai peanut sauce which are all items that I found at my local Walmart.
Ingredients
Thai Peanut sauce/stir fry | 2 cups mozzarella cheese | 1/4 cup shredded carrots |

2 cups shredded rotisserie chicken | 4 scallions, slice diagonally | 1/4 cup chopped roasted peanuts |
1 prepared pizza crust | 1/2 cup white bean sprouts | 2 Tbsp chopped fresh cilantro |
Directions
- Preheat Oven
- Place chicken in a small bowl and drizzle with Thai peanut sauce.
- Spread a thin layer of the peanut sauce over the pizza shell.
- Cover sauce with 1 cup of mozzarella cheese.
- Distribute the chicken, scallions, bean sprouts and carrots.
- Add the rest of the cheese and top with the chopped peanuts.
- Bake in the oven according to the pizza shell directions.
- Garnish with chopped cilantro.
- Allow to cool for 5 minutes before slicing.
