The wildly popular focaccia is so easy to make using refrigerated pizza dough.
1 container refrigerated pizza dough
1 onion, finely chopped
2 cloves garlic, minced
2 Tbsp. olive oil
1 tsp. dried basil leaves
1/2 tsp. dried oregano leaves
1/2 tsp. dried thyme leaves
1 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
Preparation:
Preheat oven to 400 degrees. Spread dough onto greased cookie sheet, pressing to make a 10x12" rectangle. Dimple with fingertips to make indentations. Set aside.
Cook onion and garlic in olive oil in small saucepan. Remove from heat and stir in herbs. Spread this mixture evenly over the dough and top with the cheese.
Bake at 400 degrees for 10-15 minutes until focaccia is deep golden brown. Cut into squares to serve. 12 servings

NOTES:
Panera Bread serves three different types of focaccia bread and they are asiago cheese, rosemary & onion, and basil pesto. With a few substitutions to the recipe above you can create a bread that is similar in taste to what is served in the restaurant.
