Mediterranean Salmon Salad

What's in it?  
Chilled salmon filet served on a bed of field greens and romaine, with baby Kalamata olives, feta cheese, Mandarin oranges, sliced almonds and red onions all tossed in a  honey tangerine vinaigrette dressing.


Honey Tangerine Vinaigrette

1 sprig thyme, chopped
1 teaspoon shallots, chopped
3 tablespoons champagne vinegar
3 tablespoons fresh tangerine juice
1-tablespoon honey
1/4-cup olive oil
Salt and fresh ground black pepper


For dressing, combine thyme, shallots, vinegar, tangerine juice and honey in a small bowl. Drizzle oil in a thin stream into the bowl while whisking. Season with salt and pepper. Pour on desired amount of dressing toss well.
