Obviously the star of this sandwich is the cranberry chutney and the cheese so grab some Boursin, turkey breast, fresh spinach, good crusty bread and the ingredients listed for the recipe below to make an awesome Panera Panini Copycat Sandwich.
Cranberry Mostarda Recipe
1 cup sugar
1/2 pound fresh cranberries
2 tablespoons Colman’s dry mustard
1 teaspoon white wine
1 tablespoon black mustard seeds
Kosher salt
Combine sugar, cranberries, and one cup of water. Bring a boil, lower heat and simmer for 10 minutes.
While the cranberries cook, combine the remaining ingredients and whisk. Add mustard mixture to the cranberries and cook for 15 minutes over high heat until thickened and syrupy.

NOTES: You don't need a fancy panini press! I use my George Foreman grill to make pressed sandwiches all the time. I just lay the sandwich in and put a heavy cast iron skillet on top to mash all the ingredients down. Works great.
