Good Morning Everyone! Hope you have a great Monday. If you have not taken your breakfast and still wonder what to prepare for today perhaps you would like to try making this "Pancakemisu" which would be ready in less than 15 minutes time!
As we are in the month of December and Christmas is just around the corner I am sure you are into festive mood just like what we do too. And since pancakes are always one of our family's staple food which I would rotate different flavour at least once or twice a week, I decided to make something new for this festive season.
For this Pancakemisu, I have adapted the idea from Tiramisu which used coffee and mascarpone cheese (sometime cream cheese) as the main ingredients. Here each layer of fluffy pancake is infused with coffee fragrant from the Gold Kili Double Shot White Coffee which makes it similar to the tiramisu sponge fingers being soaked with coffee mixture.
To impress your guest or enhance the flavour of your Pancakemisu, you could even serve it with a decent scoop of Coffee or Vanilla Ice-cream which makes it taste great when the ice-cream starts to melt. Or with a cup of coffee to fill the air with aromatic fragrant while enjoying this for breakfast or afternoon tea.

PANCAKEMISU

Ingredients:
- 100g Cake Flour
- 1 Teaspoon Baking Powder
- 1 Tablespoon Melted Butter / Corn Oil
- 1 Egg (55g)
- 70ml Fresh Milk
- 2 Sachets Gold Kili Instant Double Shot White Coffee
- 2 Tablespoons Caster Sugar
- 125g Spreadable Cream Cheese
- Cocoa Powder For Dusting
Method:-
1. Using a balloon whisk, mix cake flour, baking powder, sugar and Gold Kili Instant Double Shot White Coffee together till well mixed.
2. Whisk egg and milk in another bowl till combined.
3. Slowly whisk egg mixture into the flour ingredients follow by melted butter (do not overmix the batter or you would end up having tough and rubbery pancakes).
4. Lightly grease a non-stick pancake pan, ladle in 2 tablespoons of prepared batter, swirl the pan and cook pancake over medium low heat.
5. Turn the pancake over when large air holes appears on the surface of the pancake, cook for another 1 minute or more depending on its thickness. Repeat the process to finish the batter.
6. To assemble the Pancakemisu, spread each piece of pancake with a layer of cream cheese then dust it with some cocoa powder using a fine sieve.
7. Stack up the pancake and serve immediately with a cup of Gold Kili Instant Double Shot White Coffee to perk up your treat.
