Winter Vegetable and Paneer with South Indian tempering

This recipe is one of my favorite side dish with rotis. This is the same recipe of the potato stuffing for Masala Dosa. In summer I make it with potato, corn etc., but in winter I prepare the same recipe with all winter vegetables, like Beets, carrots, Green beans, green peas and potato. This time I added paneer in it and it was so mouth watering and at the same time it was a healthy and colorful dish.



You need :
Beets, carrots, green Beans : about 2 cups(cubed)
Potato : 2(cubed)
Green peas, frozen sweet corn/baby corn : 1/2 cup
Panner : 1 cup(cubed)[optional]
Onions : 2(thinly sliced)
Ginger : 1"(finely chopped)
Green chilli : 2(finely chopped)[use it as per your taste]
Tomato : 2(medium-chopped)
Turmeric powder : 2 tsp.
Red chilli powder : 1-2 tsp.
Salt to taste
Oil : 2 tblsp.
Fresh coriander leaves for garnishing

For Tempering :::
Dry red chilli : 1(whole)
Mustard seed : 1 tsp.
Dried Channa Dal : 1 tsp.
Dried Urad Dal : 1 tsp.
Fresh Curry leaves :  7-8 nos.

How to :
  • Boil all vegetables except green peas and corn in pressure cooker until tender, not overboiled. If you are using fresh green peas and corns, then add them too. For frozen ones, no need to boil. Set aside.
  • In a pan, heat oil, fry paneer pieces from both sides until lightly brown. Set aside. In the same pan, put flame to medium, first temper with dry red chilli, then add urad and chana dal, when dry red chilli and dals turn little dark in color, add mustard seeds and curry leaves, when mustard seeds start to crackle, add onions. Saute till they are translucent, add chopped ginger and green chillies.
  • Saute for another minute, then add chopped tomatoes and saute until tomatoes are soft and mixed well. Now add boiled vegetables, turmeric and chilli powder. Season with salt and saute for 2-3 minutes, so everything blends well.
  • Lastly add fried paneer pieces and chopped up coriander leaves, Mix well and you are done.
