This post is about a very popular Dessert dish made in every special occassion in Indian Household - Gajar ka Halwa or Carrot Halwa or Carrot pudding. Gajar ka Halwa is described as a Punjabi halwa, as it is native to Indian state of Punjab. It is a light Punjabi dessert with less fat, so it is treated as a light nutritious dessert.
Gajar ka halwa is made with nuts, milk, sugar and ghee with grated carrot. Grated carrots are cooked in boiled milk with sugar and lots of nuts in slow flame until carrots are cooked and whole milk is absorbed with constant stirring. But you can avoid this constant stirring part, by making it in Microwave. The taste will be the same but with very very less effort.
You Need :
Carrots : 1/2 kg.(Peeled and grated finely)
Condensed milk : 1 cup (use more or less as per your taste)
[You can add sugar instead of condensed milk, adjust as per your taste]
Ghee(clarified Butter) : 2 tblsp.
Milk : 1 cup
Cashew Nuts : Chopped in small pieces
Raisins : a handfull
Cardamom Powder : 1 tsp.

This is my microwave which made this possible.
How to : - Grate the carrots as fine as possible, then cooking time will be less.
- In a big microwave safe bowl, add grated carrots, ghee and milk. Mix well and microwave covered for 10 minutes in 100% power or High. Stir once in between.
- Take out and add condensed milk, cashew nuts and raisins. Mix well and again microwave covered for another 10 minutes in 100% power or High. Stir once in between and check the sweet level, if needed as little more condensed milk.
- Microwave for more minutes until milk is absorbed and carrots are totally cooked. Always stir in between.
- When done, take out the bowl and sprinkle cardamom powder over it and give a good stir. [To make cardamom powder, take out the black seeds from cardamom and grind into fine powder.]
