Truffle oil is one of those ingredients that's a bit precious, but oh man does it taste good. A few drops go a long way and adds an instant richness and pungency to any dish. But if you don't have any on hand, no worries! This dish is delicious sans truffle oil too. Try this combination on your favorite veggies for grilling. Enjoy!
Grilled Asparagus with Chili, Truffle Oil, and Parmigiano
For 2
1 bunch asparagus (thicker stalks work best)
2 tablespoons olive oil
1 teaspoon chili flakes
1/2 teaspoon truffle oil
2 tablespoons finely grated parm
salt and pepper
Chop the woody tough part of the asparagus off (the bottom inch or two), and dress with olive oil, salt, and pepper. Grill over high heat until marked up, but not totally blackened (about 5 minutes total). Immediately drizzle with truffle oil and sprinkle on the chili flakes and park. Toss together with your hands and serve.
