Crispy Artichoke Hearts

According to the California Pizza Kitchen website these appetizers are artichoke hearts fried with Japanese panko bread crumbs, then sprinkled with Parmesan cheese and it is served with a remoulade sauce.  I've been seeing a lot of recipes calling for panko bread crumbs, so I went looking for them the other day at my local Walmart and found them on the shelf so I'm assuming they are a standard item throughout the country.  The recipe below makes 4 servings.



Ingredients for Artichokes

1 pkg frozen artichoke hearts
1/3 cup panko bread crumbs
oil for frying
1 egg
1/3 cup dry bread crumbs
 
 
1/2 tsp dried oregano
 
 
1/4 tsp black pepper
 

Directions

Heat about 1 inch of oil in a sauce pan over medium high heat.
  1. In a bowl beat the egg and set aside.
  2. In another bowl combine both bread crumbs, oregano, salt and pepper.
  3. Pat the artichoke hearts dry.
  4. Dip them in egg and then bread crumb mixture.
  5. Fry artichokes in batches until golden brown and crispy (about 3 minutes)
  6. Strain on paper towels to remove excess oil.

Ingredients for Sauce

1 cup french dressing
1 Tbsp grated onion
 
1 cup spicy mustard
1 Tbsp Worcestershire sauce
 
2 Tbsp paprika
1/2 tsp celery salt
 
1 Tbsp horseradish
juice of one lemon
 

Directions

  1. Combine all the ingredients.
  2. Blend throroughly.
  3. Chill until ready to serve.
