I've seen lots of Cheeseburger Soup recipes on the Internet and the ingredients looked very close to what was in the Philly Cheese Steak Sloppy Joe's. All I needed to do was thin out the Sloppy Joe meat mixture with some beef broth, cook it with 2 cubed potatoes to thicken the broth and add diced celery for more soup flavor. Then I added in the leftover cheese sauce from the Sloppy Joe's and it was done! I served it with homemade garlic toast floating on top. It went over VERY well with my hubby and daughters! The garlic toast softened slightly and gave the soup the bread element it needed to be considered a cheeseburger. I think I'll make this soup more often!
Cheeseburger Soup
INGREDIENTS:
2 cups of leftover Philly Cheese Steak Sloppy Joe meat mixture
2 cans beef broth
2 potatoes - cubed
2 ribs celery - diced
1 1/2 cups leftover cheese sauce from Sloppy Joe recipe
4 slices garlic toast
DIRECTIONS:
Bring beef broth to a boil in a large saucepan.
Add in potatoes and celery.
Cook until potatoes and celery are soft.
Puree the potatoes and celery in the broth to thicken the broth.
Then add in the leftover cheese sauce and simmer for 10 minutes.
Serve warm with garlic toast on top.
TO MAKE GARLIC TOAST
Take 4 slices of Italian bread and toast them until crunchy.
Rub the top and bottom of each slice with fresh garlic.
Drizzle with olive oil and sprinkle with salt, pepper and oregano.
Serve on top of each portion of cheeseburger soup.
